Easy Breakfast Ideas


One of my favourite easy breakfasts are eggs baked in a red pepper

I pop them in the oven first thing in the morning at 200 degrees celsius then cut peppers half lengthwise. Discard seeds and stalk.

Pop on an oven tray

Crack an egg in each pepper half

You can add grated cheese or herbs such as coriander or chives

Bake for 20 to 25 minutes

Allow to cool then enjoy

Whilst cooking you can get ready or have a leisurely cup of whatever you enjoy. Sometimes I do a few chores then enjoy them.

Breakfast is the most important meal of the day regarding blood sugar balancing and including a source of protein such as eggs, fish, yoghurt, nuts or seeds helps us to feel fuller for longer and provides us with the energy we need .

Also with this in mind do additions to your usual breakfast and add a tablespoon of yoghurt to your cereals.

Wholegrain toast and smashed avocado sprinkled with pumpkin seeds and sunflower seeds.

Think protein and you will be amazed at how you much more energised you feel in the day.
